Chopsuey

We are running out of groceries today so I decided to cook chopsuey for our last remaining pork and veggies. The husband liked it soo much!

Ingredients:

brocolli, cut into bite size pieces
brussel sprouts
yellow squash
zucchini
2 cloves garlic, minced
1 small white onion, diced
1/4 kilo pork, cut into cubes
2 tbsp cooking oil
1 tbsp. soy sauce
2 tbsp. oyster sauce
salt and pepper to taste

Procedure:

1. Put the pork into the pan and add a little bit of water to tenderize the meat.
2. Once the water dried up, put the oil and fry the meat for 3-4 mins. Set aside.
3. On the same pan, saute garlic until light brown then add the onion. Cook until the onion
turns translucent.
4. Add back in the pork. Seasoned with soy sauce, oyster sauce and pepper.
5. Add the vegetables and pour in the water. Let it simmer for 5 mins.
6. Add salt if need then turn off the heat.

Summer Chicken Alfredo

I have cooked this before and we both loved it. I cooked it again today since we have gotten tired of eating red meat. I got this recipe from winn-dixie while out grocery shopping. As always, I have changed it a bit to fit our taste. I used our left over steamed veggies and the last cup of milk in the fridge since we ran out of light cream so the sauce was not as thick as it supposed to be.

Ingredients:

1 medium size chicken breast (deboned)
3 cups water
1 maggi chicken bouillon cube
1 stick butter
1 cup light cream
1 cup grated parmesan cheese
steamed vegetables (zuccini, carrot, broccoli)
cooked pasta shells

Procedure:
  1. Slice chicken into cubes.
  2. Boil 3 cups of water and dissolve the bouillon cube.
  3. Mix in the chicken and cook until its tender. Drain the chicken and set aside.
  4. Heat pan and melt the butter.
  5. Add the light cream.
  6. Then, add the parmesan cheese and mix thoroughly making sure that the cheese doesn't stick to the bottom of the pan.
  7. Let it simmer before adding the chicken and the steam vegetables.
  8. Cook for 15 more minutes.
  9. Pour into cooked pasta shells.

Onion Rings

We decided to relax and drink a beer today. I have always been a beer drinker but I want my salty chips with it. That's my solution for the bitter after taste of beer. The chips on the nearest convenience stores are pricey so we decided not to get them. I decided to make onion rings myself and got a simple recipe from allrecipes.com

Ingredients:
1 piece large onion (peeled and sliced into rings)
1 cup all purpose flour
1 cup beer
salt and pepper to taste
oil for frying

Procedure:
  1. Mix flour, beer and salt and pepper into a bowl until there are no more lumps.
  2. Dip the onion rings into the batter until evenly coated.
  3. Fry in hot oil until it turns brown.
  4. Drain on paper towels.
